I am writing to you as Denny Baldin, representing the Irish Wine Coop, with a vision that I believe could revolutionize our Irish countryside, economy, and culture. The initiative we're proposing is not just about wine; it's about community, education, tourism and the celebration of life in a way that resonates with our Celtic heritage and contemporary needs.  

 

The Irish Wine Coop Movement

 

Local Wine Production: Our goal is to produce 30 million bottles of organic Irish wine by 2030-35, half of what Ireland currently consumes. This endeavour aims to foster over 10,000 full-and part time jobs for Irish vine growers and their family while contributing with €250 million annually to Irish rural economies.

 

     

    1. School to Fork Network: Leveraging our vineyard infrastructure, we plan to introduce a revolutionary school canteen program inspired by the rich food cultures of France and Italy where my children and I have been eating for years. This initiative will transform Irish lunch hours into masterclasses where students learn to appreciate healthy, locally sourced food. We believe that farming and cooking are intertwined arts that can nourish not just the body but the soul, mind, and creativity of our children and the future Irish generation to come. 



      2. Festival de l'Amour Hospitality Network: Beyond wine, our vineyards infrastructure finely tuned around Mediterranean climate will serve as wine tourism venues for inspiring food, challenging art, beaming smiles, creative events, music from the soul uplifting walls, sensual vibrant wines (from the ashes of the Piedescalso Art Cafe' Dublin 78 Thomas Street, Liberties). This network will not only celebrate our heritage but also invigorate our Irish tourism sector, providing spaces for weddings, festivals and artist residencies, fostering a connection and deep sense of belonging



        Why This Matters: 

         

        • Economic Growth: One Polytunnel = One Barrel of Wine, by keeping the economic benefits within rural Ireland, we can revitalize rural areas, prevent urban drift, and promote sustainable local economies. 
        • Farming Generation re-newel: The Irish Wine Coop Project aids generational renewal by integrating young farmers into sustainable viticulture for a fraction of the investment required to start up an Irish traditional meat or dairy farm. It's the perfect match for already existing (and rapidly disappearing) traditional horticulture, cattle and sheep farmers, offering new income streams to revitalize rural economies.
        • Cultural and Educational Enrichment: Our programs aim to reconnect the new generation with the land from a new farming prospective based on abundance and celabration, teaching them the value of food, community, and art in everyday life. 
        • Sustainability: Short chain Organic wine and vegetables production, coupled with educational programs, will promote ecological awareness and practices, contributing to Ireland's green agenda. 
        • Community Building: These initiatives will bring people together, fostering a sense of belonging and joy in communal activities, reminiscent of our ancestors' gatherings


        We are at a crossroads where we can choose to engage in abundance or scarcity. The Irish Wine Coop chooses abundance, joy, and creativity. We invite everybody to join us in this vision whic is now already in movement, to imagine an Ireland where local vineyards are not just places of production but of celebration, learning, and life enjoyment.

We want to be the pilgrimage destination for the wolrdwide wine lovers wishing to taste our unique new generations of the purest and finest organic Irish wines: alive dance of Truth and Beauty, Love, Passion



        The New Organic IWC Family Farm Concept: 


        • Target: Generational Farm Renewal and a viable new Family Farm Concept. Here we come with a 400 billion wine market cap operation which rapresent a generational and historic opportunity for tens of thousands of Irish young boys and girls and a relisable Irish Wine Coop Business model. We want to make Ireland a global player for Organic wine market.
        • Investment: €60,000 for 20 IWC polytunnels vineyards/barrels of wine/6.000 bottles of wine a year IWC Family Winery set up that at need can be tailored around an already exisiting cow, sheep, horticulture traditional farm; in fairness a set up at less than 3 minute walk of any rural Ireland citizens backdoor. 
        • Infrastructure: Including 20 Mediterranean Habitats for specific uses: 1 for reception wine tasting, 1 dedicated to kitchen and dining area, 1 Art Room Dancefloor, children playground areas, 5 to 10 accommodations/bedrooms, and school canteen food production at any possible space left. 
        • Employment: Creating at least one full-time wine maker (€40.000) position and two part-time jobs (€15.000x2) related to the "School to Fork" and "Festival de l’Amour" initiatives for each Family Farm Unit of 20 IWC polytunnels vineyards. 
        • Economic Impact: A potential turnover of €70,000 per farm, significantly boosting rural economies compared to the contemporary weak traditional Family Farm sheep or cow business model. 



        HOW? The IWC Business Model (The Trojan Horse) 

         

        The Irish Wine Coop's (IWC) strategy is both simple and innovative, leveraging what we call the "Trojan Horse" approach. Here’s how it unfolds, estimation:

         

        • One Polytunnel = One Barrel of Wine: we grow our vineyard inside polytunnels or glass house, sized between 6x12 meters to 9x15 meters, each one producing approximately 300kg of grapes, which translates into one 220-litre barrel of wine, or about 300 bottles. This setup is ideally placed within a 3-minute walk from the homes of our new rural Irish wine makers... and/or around village perimeters, creating a network that also serves as a food source for school canteens and agri-tourism.


        The IWC Algorithm:  

          • Initial Investment: Spring 2025, €60,000 is the entry cost to set up an IWC Family Wine, 20 IWC Polytunnel Vineyard, 10 years IWC Academy included. 
          • Production: After the first 2 years of care, pruning, and adhering to the highest IWC standards, each polytunnel can produce one barrel of organic wine, 20 barrels, 6.000 bottles each IWC Family Farm already by Autumn-Winter 2026


          • Return on Investment: by selling each bottle at €5 yields €30.000 profit per year, or €60,000 at €10 per bottle. The initial investment is recouped in just two years of full production. 


          • Long-term Profitability: Given the potential 100-year lifespan of a vineyard, this translates to substantial long-term revenue for future generations: 98 years 20 IWC polytunnels production, 6.000 bottles a year, 588.000 bottles of wine sold at €5 = €2.940.000 clean profit for a once in a lifetime (entry level) investment of €60.000

           


          The IWC Socio-Economic Scenario: 

           

          Global Wine Market Overview: 

           

          • Market Dynamics: The global wine market cap boasts a turnover of €400 billion, with a demand for 34 billion bottles. Within this, the organic wine sector, although smaller, is growing with a turnover of €7 billion, representing a supply of just around 1 billion bottles.  Our IWC Business model can sustain industrial scale grouth performance while guarantee quantity and quality for an 100% Organic production. Best Product for a Lower Price. It can be an instant Jackpot for Rural Ireland economies.           • Irish Context: Ireland, with its €1.5 billion wine market, consumes 55 million bottles annually, all of which are currently imported. This presents a unique opportunity for local production. If next Spring 2025 only 5.000 Irish family size famers will join the IWC with 20 polytunnels vineyard (out of 167.000 farmers present in Ireland) and already Winter 2026 we likely have 30 million bottles of sparkling party vibes Organic Irish wine to be drink at Christmas.

           

          UK Wine Industry as a Model: 

           

          • Growth: The UK has seen a remarkable increase in wine production, with 2023 producing 20 million bottles from 3,928 hectares, a 74% increase in vineyard area over five years.  
          • Economic Impact: This sector employs 2,500 full-time and 8,500 part-time workers, with half being women, highlighting inclusivity. Notably, wine tourism contributes significantly to winery income. English wine industry is today the fastest growing farming sector in UK. 
          • Market Focus: Predominantly focusing on domestic sales with 93% of wine sold within the UK, suggesting a strong local market support for domestic wine. 

           

          Irish Agriculture and Food System: 

           

          • Sector Overview: Agriculture employs 167,000 people in Ireland, contributing 6.5% to total employment. The sector's turnover is €18.3 billion, with a high number of family farms focusing on cattle or sheep farming, which yield modest incomes. 
          • Challenges: With an aging farmer demographic and out of time farming business model, the sector faces sustainability issues, with young people often opting for more lucrative urban careers. To set up a traditional meat or dairy farm has gigantic investment compared to our IWC 20 polytunnels family unit. 

           

          Dutch Agri-Food System Marketing Case: 

           

          • Post-War Transformation: Post-World War II, the Dutch faced a similar dilemma to Ireland today: the allure of urban jobs versus the deep-rooted farming tradition.  
          • Innovation: The solution was a shift to indoor, controlled environment out of soil agriculture, leveraging technology and education through Wageningen University. 
          • Outcome: This led to the Netherlands becoming the world's second-largest agri-food exporter, despite its limited land size, showcasing the potential of strategic innovation. 

           

          Caviro: The Italian Wine Cooperative Model: 

           

          • Scale and Ownership: Caviro, Italy's largest wine cooperative, has 11,650 member vine growers who own 52% of the company. It produces 245 million bottles with a turnover of €417 million. 
          • Market Distribution: Their product mix includes a significant portion of wine, with a balanced domestic and international distribution strategy. 
          • Sustainability: Caviro is recognized for its advanced sustainable wine-making practices, symbolizing how large-scale cooperation can lead to economic and ecological benefits.  



          The Irish Wine Coop Proposal: 

           

          • Vision: Drawing inspiration from these examples above, the Irish Wine Coop aims to: 
          • Establish a marketing case that can rival the Dutch in innovation and the Italians in cooperative scale.
          • Use Ireland's unique position to not only produce wine but enhance Irish rural economies, preserve agricultural tradition, and innovate in food education and tourism. 
          • Promote sustainability by focusing on organic production, local employment, and community engagement.  
          • Unfair advantage: our IWC vineyards are grown in finely artificially tuned Mediterranean climate ecosystem where all is under our control: temp, water, wind, soil, nutrients. Which means we have all the element to be 100% Organic almost effortlessly while have the capacity to scale up at an industrial expansion rate = space for everybody to join in. 400 billion Market Cap.

           

          • Call to Action: We invite the whole of Ireland to leverage Her resources, heritage, and the global market trends to foster a new wine industry Irish people will manage in the best interest of the next generation of Irish children. Let's create an ecosystem where the socio-economic fabric of rural Ireland can be woven with threads of entreprenurial innovation, sustainability, and cultural enrichment. 



          WHEN? KAIROS! 

           

          We find ourselves at a pivotal moment in Ireland's history where the traditional family farm model, a cornerstone of our cultural identity, is threatened by the rise of industrial agricultural giants. These entities, powered by unlimited capitals, advanced technology but often lacking heart, challenge the essence of our rural communities. Yet, this very moment also presents the Irish youth with an unprecedented opportunity through the Irish Wine Coop. 

           

          The Irish Wine Coop's Visionary Path: 

          • 2025-2027:  
          • Turnover and Investment: €2.5 million turnover with an investment of €3 million. 
          • Production: 0.3 million bottles, creating 50 full-time jobs. 
          • School to Fork: 1% of school canteens' turnover, supporting 150 part-time jobs. 
          • 2027-2029:  
          • Significantly Expanded: Turnover expected to reach €25 million with a €30 million investment. 
          • Production: Up to 3 million bottles, employment for 500 full-time workers. 
          • Canteen Turnover: Increases to 50% of rural school canteens, with 1,500 part-time jobs. 
          • 2030-2035:  
          • Maturity Phase: A turnover of €250 million with a €300 million investment. 
          • Production: Reaches 30 million bottles, employing 5,000 full-time workers. 
          • Full Canteen Coverage: 100% of school rural Ireland canteens covered, with 15,000 part-time jobs. 

           

          Empowerment Through Ownership: 

          • IWC Ownership: Denny Baldin will donate/gift 51% of the IWC to its members, the Vigneron Vignaioli Irish Wine Makers, transforming them into stakeholders and stewards of this cultural and economic renaissance. When? 2030-35, 30 millions bottle production. 

           

          Ambitious Goals: 

          • By 2035-2040:  
          • Turnover: Aiming for €1 billion with a potential investment of €850 million. This will be all work of the new IWC Irish Wine Makers Managment.
          • Production: Expanding to 300 million bottles (critical mass to be a global wine player such as Caviro Italian Coop or Champagne French wine region), with 50,000 full-time jobs. 
          • Rural Economic Impact: The economic benefits remain within Ireland, fostering a self-reliant rural economy with hundreds of millions each year falling inside Rural Ireland Family Farm fence.

           

          Long-Term Vision: 

          • 2040-2050:  
          • Turnover Potential: Between €7-14 billion, with the infrastructure to supply 1 billion bottles annually.  
          • Market Share: Aiming for +50 to 100% of the global organic wine supply, representing 3% of the total wine market coming from our newly created Irish Wine Coop under polytunnel/glass houses finely tuned Mediterranean Climate infrastructure 

           

          Societal and Economic Transformation: 

           

          • Employment: Over 200,000 jobs created across the IWC, School to Fork, and Festival de l’Amour initiatives by 2035-40 
          • Cultural Impact: This model not only rejuvenates the agricultural sector but also revitalizes Ireland's cultural landscape, making it a leader in sustainable, community-driven wine production.

          • Organic Integrity: Our vineyards, managed with the highest IWC standards, ensure 100% organic production by controlling every aspect from air to water, heat, and soil nutrition, minimizing the risk of disease. 



          How to Join the Irish Wine Coop? 

           

          The Irish Wine Coop (IWC) is not just an opportunity for investment but a chance to be part of a cultural and economic renaissance in Ireland. Here’s how you can join: 

           

          Vigneron Vignaiolo Irish Wine Marker Prospective: 

           

          • 10-Year Masterclass/Academy/Contract: 
          • Initial Investment: A one-time fee of €750 for setting up each polytunnel vineyard in the first year, which includes membership into the IWC. (You provide the polytunnels infrastructure) 
          • Annual Fee: €75 per year from years 2 to 10, totaling €1,500 over 10 years, which equates to the profit from one year's full production harvest sold at €5 per bottle, offering an excellent Return on Investment (ROI) which has no match in the Irish farming world. 
          • Benefits: 
          • Access to a 10-year masterclass/academy to learn IWC's highest standards for vineyard and winemaking practices. 
          • Learn how to manage and participate in the cooperative for the benefit of future generations. 
          • Free use of IWC wineries and vineyard tools for 10 years. 
          • Revenue Sharing: 
          • Harvest: Bring your harvest to the IWC winery where the income is shared 77% to the wine maker, 23% to the IWC. 
          • Option to Ferment Independently: If you choose to ferment your wine, one-third of your grapes are still provided to the IWC, with the IWC returning one-third of the income from these grapes to the IWC Wine Maker. 
          • Flexibility: 
          • You can exit the IWC at any time during the 10-year contract with a 3-year notice period. 
          • Equity Donation: By 2030-2035, 51% of the IWC equity will be donated/gifted to the IWC's Vigneron Vignaioli Irish Wine Makers, making you a co-owner of the coop. 

             

            Irish Wine Coop Revenue Prospective: 

            • Basic Development (2030-2035): 
            • 30 million bottles/year with 5,000 wine makers by 2030 leading to significant income from membership fees and wine sales. €75 + €34.5 million a year.
            • Full Size Development you are the owners(2035-2040): 
            • Aiming for +300 million bottles/year, which would drastically increase both membership fee income and revenue from wine to €750 millions + €340 million a year.

            • Spyral Expansion: Cloughjordan. Gurteen College. Nenagh. Tipperary, Munster. Ireland: 
            • Cloughjordan is where we aim to set up the first 100 IWC polytunnels vineyards along 2 prototype "School to Fork" and "Festival de l'Amour" pillars.
            • The Gurteen College is where we aim to set up the next 100 polytunnels and make it here in Ireland what the Wageningen University represent for the Netherland Agri-Food miracle. After those 2 pillars are  in place we wish to syral and expand like a wild fire in Burrisokane, Nenagh, Moneygall, The whole Tipperary and Munster. At that stage we will already be seeling 85% of our wines Export. 15% Domestic.
            • Investment Opportunity: An invitation for Irish citizen to invest €30 million for a 10% equity stake an become mentor to the School to Fork initiative locally at your own primary school and stake holder of a start up company that has the potential to match our major beer and wiskey global player brand.
              • Philosophical Shift: 
              • A call to move from an economic model based on scarcity to one of abundance, inspired by Dionysian principles. We won’t hunt our goal, we will create the ground in which prosperity can sprout, flower and fruit fat abundant yield. 
              • Strategic Investment Use: The €30 million for the 10% equity will entirely invested to fund 20,000 “IWC €1,500 Vineyard Grants,” reducing the entry cost for new wine makers. Half of the investment will be quickly recouped through the initial Academy fee and provide the necessary fund to already from day 2, structure and consolidate the School to Fork Project.

                • By 2030-2035, with the donation of 51% equity, the IWC will become largely member-owned, fostering a legacy of sustainable, community-driven agriculture.

                • Market Price and Quality: 
                • IWC wines, particularly natural petillant, aim to command higher prices due to their quality and health benefits. An Irish 100% Organic sparkling wine product to enter the Champagne/Spumante segment. 
                • Expansion and Government Partnership: Future plans include expanding the initiative significantly, potentially inviting government investment to further the project’s reach and impact. 
                  • Local Implementation: Starting with Cloughjordan, the initiative aims to create a model that can be replicated across all rural Ireland villages, fostering local economies and educational systems.

The UK recent wine industry performance should ring a golden bell inside everyone living in rurlal Ireland. The more we are the better. Critical mass to establish the Irish Wine Coop as a global Organic Wine Leader: 300 million bottles. Only 50.000 new rural Ireland farmers, or even just a citizen owning a piece of land in the back garden big enough to, set up 20 polytunnels/barrels of wine a year set up... Jackpot Eureka Bingo... an estimated 4.5 billion a year inside our pocket. And next Monday we go to work inside our Eden like Mediterranean climate office while outside is reaining.
